Clairin Vieux Sajous 4 yo Lustau Oloroso Sherry cask Vol.56,7% Cl.70

It is the first Clairin that becomes a real Rum, overcoming 4 years of aging in ex sherry oloroso barrels and thus losing the primary characteristics of Clairin, to enrich itself with a new aromatic profile typical of aged rums.

It is produced in the grand terroir of St. Michel de l'Attalaye, with the Cristalline cane, one of the best ancient varieties, now grown only in Haiti and harvested when fully ripe and transported by animals to the distillery.

It is pressed more gently in the small mill than in the typical French Antillean way.

Fermentation starts spontaneously with indigenous yeasts; the distillation still is heated over the bagasse fire; the cane fiber is squeezed and dried in the sun.

The 4-year Vieux Sajous is totally aged in the tropical climate of Port-Au-Prince from a selection of barrels that Velier bought from Lustau and which contained the prized Oloroso and Pedro Jimenez, filled on 30 November 2017 and left until August 2021 ..

Vieux Sajous 4 years ex sherry oloroso cask from Lustau marks a turning point in aging, the result of the experience of the short aging of the Clairin Ansyen but above all due to the fact that Clairin Sajous had a full alcohol content much lower than any other rum in the the moment of putting into the barrel.

The result is extraordinary.

Tasting Notes:

Bouquet: Explosion of flavor with abundant notes of vanilla, exotic fruit, chocolate and pear. Floral scents.

Palate: vibrant with a good balance between dry tannins, sweetness of honey and vanilla and the softness of cherry in syrup, sherry. Woody Deep and a finish with spicy aromas.

Final: Persistent and soft like velvet. Makes you want to grab another drop right away!

The Vieux Sajous 4 years ex sherry oloroso cask by Lustau is a refined rum to combine with a cigar among the best in the world such as Padron Reserva or Macanudo Opus X, or why not, a rum to be tasted slowly with a nice smoke of Mastro De pipe. Paja is a Solani burley aged flake tobacco.
