Knob Creek is a series of bourbon whiskeys born in 1992 and produced by Jim Beam at their distillery in Clermont, Kentucky.
It is part of the series of brands destined for the high-end American whiskey market.
Knob Creek also takes care of the aging process which lasts 9 years (relatively long for a Kentucky bourbon) and which allows the distillate to absorb more sugar from the wood as well as giving it its very dark golden color.
This bourbon was created by Booker Noe, master distiller emeritus for six generations and reflects the strength, taste, care and patience that characterized the bourbons before prohibition.
The bottle embodies the handcrafted look and atmosphere of the beginning of the century, with the label referring to scribbled newspaper sheets with the name of the whiskey that was often glued on the bottles.
Knob Creek Rye is a mixture of rye whiskey with a significant aging of up to 9 years, coming from a rather limited series of small barrels and bottled at full grade 50% volume.
Tasting notes:
The nose is clean with initial notes of oak and pepper followed by caramel and vanilla.
On the palate it is rich and sweet, with spicy wood notes, white pepper, vanilla and a hint of red fruit.
The finish is full and long with notes of vanilla and aftertaste of oak wood.
