Vittorio ‘Gianni’ Capovilla is recognized worldwide as one of the best, if not the best, distiller in the world, especially for his passion: fruit distillates, rums and grappas.
Capovilla defines his excellent grappas as the noble expression of a "poor" product.
Grappa “bacco e tabacco”, is obtained by double-pass distillation in small copper stills in a bain-marie of Amarone pomace subsequently reinforced with Kentuky tobacco leaves.
The pomace is chosen for its very low sulfur content and is pomace from Romano Dal Forno, a famous Amarone producer, the first distillate is obtained.
Tobacco leaves are added to the Amarone distillate.
The product is distilled a second time.
Vittorio has made the excellence of the raw material and the purity of the distillates his true reason for living.
The result is indeed grappas and very pure distillates, for true connoisseurs.
We use smoked Kentucky tobacco leaves, of Italian origin, to be precise from Veneto, which is used to produce the two handmade Italian "Tuscans": the original Toscano and the Moro.
After double distillation, the distillate is placed in French barriques for 4 years.
It is then bottled diluted with spring water and brought to a strength of 46% vol. without adding sugars, flavorings or anything else.
