Vittorio ‘Gianni’ Capovilla is recognized worldwide as one of the best, if not the best, distiller in the world, especially for his passion: fruit distillates, rums and grappas.
Capovilla defines his excellent grappas as the noble expression of a "poor" product.
Grappa d'amarone Capovilla is obtained by double-pass distillation in small copper stills in a bain-marie of Corvina della Valpolicella pomace used for Amarone.
The pomace is chosen for its very low sulfur content and is pomace from Romano Dal Forno, a famous producer of Amarone.
Vittorio has made the excellence of the raw material and the purity of the distillates his true reason for living.
The result is indeed grappas and very pure distillates, for true connoisseurs.
Capovilla Amarone Grappa has intense and enveloping aromas of ripe red fruits and a soft and velvety taste, with great aromatic persistence
After distillation, the distillate is stored in steel barrels for 2 years.
It is then bottled diluted with spring water and brought to a strength of 41% vol. without adding sugar, aromas or anything else.
Tasting Notes:
