Capovilla defines its delicious grappas as the noble expression of a "poor" product.
Grappa amarone Legno Capovilla is obtained by double passage distillation in small copper stills in a water bath of Corvina della Valpolicella pomace used for Amarone.
After distillation the distillate is stored in steel barrels for 2 years.
The distillate is then aged in oak barrels, refined with Capovilla's careful personal analysis in four different wooden barrels.
The pomace is chosen for its very low sulfur content and is the pomace of Romano Dal Forno, the famous amarone producer.
Vittorio made the excellence of the raw material and the purity of the distillates his real reason for living.
The result is precisely very pure grappa and distillates, by true connoisseurs.
The Capovilla Wood amarone grappa has a fine and full-bodied perfume. Composed of different honeys, candied green lemons, fresh walnuts, chamomile and dried flowers.
It is then bottled in full grade, without the addition of sugars, flavors or anything else and packaged by hand.
