Bimber Single malt Oloroso cask Batch no.3 is the latest addition to the young English distillery.
You have already read that English and non-Scottish distillery, it is in fact a start-up founded by enthusiasts of Polish origins, whose link with whiskey dates back to three generations before when the grandfather of the master distiller produced his own distillate, called Moonshine which in Polish, it is translated with Bimber.
The passion was then handed down to Darius Plazewski from a young age, and blossomed in 2015 when he, together with Ewelina, founded the distillery in London after immigrating there in 2003.
Bimber Oloroso cask is a single malt whiskey aged first in Boubon Barrels firts fill and then in Spanish Oloroso Sherry Butt.
The distillate is left for three years in small batch aging and then bottled at 51.4 degrees alcohol.
Double barrel aging allows for the creation of a single malt with exceptional characteristics, it is a pity that only 980 bottles were produced.

Tasting Notes:
Color: Burnished yellow.
Nose: Toasted tea cake packed with dried fruit, cinnamon rolls and cinnamon ginger along with a hint of lemon curd.
Palate: Red sherry fruit and chocolate covered nuts, along with runny honey, banana pancakes, and more cinnamon spice.
Finish: pineapple upside-down cake, with persistent toasted baked spices.
