Bimber Single malt ex-bourbon cask Batch no.2 is a 2020 limited edition from the young English distillery.
You have already read that English and non-Scottish distillery, it is in fact a start-up founded by enthusiasts of Polish origins, whose link with whiskey dates back to three generations before when the grandfather of the master distiller produced his own distillate, called Moonshine which in Polish, it is translated with Bimber.
The passion was then handed down to Darius Plazewski from a young age, and blossomed in 2015 when he, together with Ewelina, founded the distillery in London after immigrating there in 2003.
Bimber ex-bourbon cask is a single malt whiskey aged entirely in American oak barrels previously used for bourbon.
The 2016 distillate is left for three years in small batch aging and subsequently bottled at 52.2 degrees alcohol.

Tasting Notes:
Color: Liquid gold.
Aroma: Green apples, apricot, creme brulee. Then here's lemon, marzipan and buttery shortbread. A little coconut, too, and acacia honey.
Palate: Full-bodied and enveloping, with ripe pears, caramel and banana sweets. A little more lemon and grapefruit, then cappuccino and honey
Final: Long, persistent, honey, vanilla and apricots.
