The Decio di Belfiore apple distillate is a fruit and apple distillate obtained by double-pass distillation in small copper stills in a bain-marie.

Vittorio made the excellence of the raw material and the purity of the spirits his real reason for living.

Decio di Belfiore apples are an ancient variety of apples cultivated by the Romans which currently has obtained the recognition of "Slow Food Italian Association Presidium" for Veneto, Verona and Val policella.

The Decio di Belfiore apple is considered as one of the most historic, noble apple varieties and for this reason it is often referred to as the diamond of apples.

The trees generally ripen in the spring, with harvests starting in July and continuing until August.

These are high quality apples, with a sour taste, intense aroma and firm and crunchy pulp grown in Veneto.

Vittorio Capovilla selects only the best Decio di Belfiore apples.

Apples are de-stemmed and fermented as is done with red wines, at the end of fermentation all the fermented must is distilled.

This apple distillate is colorless, limpid and crystalline.

The Capovilla apple decio di Belfiore fior distillate obtained is full of aromas, perfumes and an explosion of sweetness in the mouth.

The product rests for at least 2 years in stainless steel tanks.

It is then bottled, diluted with spring water and brought to an alcohol content of 45% vol. without adding sugar, flavorings or other.

Tasting Notes:

Aromas: The nose reveals intense, clean, pleasing, refined and elegant aromas of apple.

Taste: In the mouth is intense with barely perceptible alcohol strength which tends to dissolve rapidly, excellent correspondence to the nose, pleasing roundness, very balanced.

The finish is very persistent with long flavors of citrus and apple.
