This is the second release of this Clairin transformed into Rum Vieux.
It is the first Clairin that becomes a real Rum, exceeding 4 years of age thus losing the primary characteristics of Michel Sajous's Clairin, to enrich itself with a new aromatic profile typical of aged rums.
Originally from the Grand Terroir of St Michel de L'Attalaye in Haiti, this Pure Single Rum is born from 100% sugar cane of the Cristalline variety and is totally aged in the tropical climate of Port-Au-Prince from a selection of Ex-Caroni barrels and Ex-Single Malt Scotch Whiskey.
It is produced with Cristalline cane, one of the best ancient varieties, now grown only in Haiti, harvested by hand when perfectly ripe and transported by animals to the distillery.
It is pressed more gently in the small mill than in the typical French Antillean way.
Fermentation starts spontaneously with indigenous yeasts. The distillation alembic is heated over the "bagasse" fire, the reed fiber squeezed and dried in the sun.
Totally aged in the tropical climate of Port-Au-Prince from a selection of Ex-Caroni and Ex-Single Malt Scotch Whiskey barrels, Vieux Sajous is the first Clairin that, after over 4 years of age, becomes a real rum.
Vieux Sajous marks a turning point in aging, the result of the experience of the short refinement of the Clairin Ansyen but above all due to the fact that Clairin Sajous had a full alcohol content much lower than any other rum at the time of barrel.
The result is extraordinary.
