The Clairin of Saint Benevolence is a blend of sugar cane juice and syrup, a bottle of the purest essence of Haiti's unique terroir and tradition in the village of Saint-Michel-de-l'Attalaye (while Sajous exports a pure cane juice).
Farmers use natural farming practices that are free of herbicides, pesticides and other chemicals.
The cane is hand-picked, pressed and fermented with wild yeasts for five to seven days, producing a lively "vin de canne": a freshly fermented, ripe cane juice with the expressive herbaceous notes of the local Saint Michel terroir.

In homage to Saint Michel, the hometown of this spirit, a separate batch of freshly squeezed sugar cane juice is reduced to a syrup and fermented in the local style known as Methode Saint Michel.
The distillation process has changed little from the traditional French techniques used in Haiti dating back to the 18th century.
The high quality sugar cane juice and syrup are distilled separately in small batches in a single pass through a handmade Creole copper still.
Tasting Notes:

Nose: Green banana, wasabi, with earthy notes of smoke and wet gravel on the nose.
Taste: A rich structure on the palate with toasted white peppercorns, cloves and green olive mignonette with an underlying sweetness on the finish.
