The GleAllachie Fino Sherry 9-Year-Old from the "wood collection" series is the Scottish distillery's most full-bodied, flavorful, yet high-quality single malt, aged entirely in ex-fino sherry Spanish oak casks.
The Glenallachie "wood finish whisky" series is a small, annual limited edition, created from a selection of the finest oak casks from across Europe and America, previously used to house other spirits.
GlenAllachie's 9-year-old "Fino sherry wood finish" single malt Scotch whisky, released in mid-2021 after Billy Walker took over the distillery in 2017 and began his experiments in maturing Glenallachie whisky.
This new single malt series features this whisky matured in ex-Fino sherry casks, resulting in a full-bodied, intense single malt with an elegant aromatic profile.
The GlenAllachie distillery was founded in the 1930s in the verdant Scottish valley of Speyside, and ownership has been passed down from father to son, making it, today, an independent business much loved by whisky fans.
So much so that the GlenAllachie distillery is being hailed as the future legendary distillery of the 21st century, on par with and even competing with Springbank.
The name GlenAllachie derives from the Gaelic "gleann aileachaidh" and can be translated as "valley of rocks." Despite its young age (it was founded in 1967) and some periods of mothballs, the distillery boasts a base of 40,000 casks, casks that have been carefully selected for the production of this single malt.
A special feature of GlenAllachie whiskies is that pumps are not used to avoid damaging the fermented product and the distillate!
The GlenAllachie 9 Year Fino Sherry Wood Finish is a limited edition from the new distillery.
This rich, ancient bronze malt derives its spicy, delicate flavors from ex-Sherry fino oak casks. Fino Sherry is the lightest and driest of the three sherries.
Fino Sherry has a pale straw yellow color and a fresh, fruity aroma because it is aged under a layer of yeast (flor), which gives the wine a unique complexity and protects it from oxidation.
Tasting Notes:
Color: Bronze.
Aroma: Honey, vanilla, butter biscuits and toffee, green apple, white flowers, and almonds.
Taste: Heather honey and hints of oak complement toffee and butter; hints of dried apricots complement marzipan, grapefruit, and a hint of spice.
Glenallachie 9-Year-Old Fino Sherry is the driest of the three ex-sherry casks.
