This is the third release of this Clairin transformed into Rum Vieux and aged in old Caroni barrels.
It is the first Clairin that becomes a real Rum, exceeding 5 years of age thus losing the primary characteristics of Michel Sajous' Clairin, to be enriched with a new aromatic profile typical of aged rums.
Originally from the Grand Terroir of St Michel de L'Attalaye in Haiti, this Pure Single Rum comes from 100% crystalline sugar cane and is totally aged in the tropical climate of Port-Au-Prince from a selection of Ex-Caroni barrels .
produced with Cristalline cane, one of the best ancient varieties, now cultivated only in Haiti, harvested by hand when perfectly ripe and transported on the back of animals to the distillery.
It is pressed in the small mill more gently than in the typical way of the French Antilles.
Fermentation starts spontaneously with indigenous yeasts.
The distillation alembic is heated by the fire of the "bagasse", the cane fiber squeezed and dried in the sun.
Totally aged in the tropical climate of Port-Au-Prince from a selection of Ex-Caroni barrels, Vieux Sajous 2017 is the first Clairin which, over 5 years of age, becomes a real rum.
Vieux Sajous marks a turning point in aging, the result of the experience of the short refinement of the Clairin Ansyen but above all due to the fact that the Clairin Sajous had a much lower full alcohol content than any other rum at the time of barreling.
The result is extraordinary.
