The pear distillate of honey is a distillate of fruit, pear obtained by distillation in double passage in small copper stills in a bain-marie.

The pears are distilled in a bain-marie at 103°C, an ideal temperature to allow both a long processing and a perfect preservation of the aromatic bouquet.

These are high quality pears, with a sweet taste, an intense aroma and a firm and crunchy pulp grown in Trentino Alto Adige near Bolzano.

Vittorio Capovilla selects only the best pears from Trentino.

The pears are destemmed and fermented as is done with red wines, at the end of the fermentation the whole fermented must is distilled.

This pear distillate is colorless, limpid and crystalline.

The Capovilla di Pera distillate of the honey obtained is full of aromas, perfumes and in the mouth it is an explosion of sweetness.

The product rests at least 2 years in stainless steel tanks.

It is then bottled, diluted with spring water and brought to an alcohol content of 41% vol. without added sugar, flavorings or anything else.

The design of the distillate bottle is beautiful ... polished and sealed by hand, it brings to mind an atmosphere that tastes like home.

Provided with a hand-written label, the bottle tells its story, proud of its history: to be specified are, in fact, the type of fruit that forms its soul, the year of the harvest that gives it its characteristics and the number of the bottle which underlines its uniqueness.
