To mark the lighting of the 81st match that brings the Levi distillery's still to life, a limited edition of 300 bottles is being produced for charity.
To prevent countless forgeries and counterfeits, this series of labels and bottles has been archived in the official archive of the Levi Serafino distillery and hand-numbered by the distillery's owners.
Each bottle has the bottle number handwritten on the label and comes with a certificate.
We purchased a few bottles, and the one you see in the photos is one of them.
"Grappa Levi distilled by Ignari" using the discontinuous direct-fire method in 2006 in Neive. As stated on the label, it is made from select pomace, still dripping with must, and cured in pits.
Grape varieties used: Nebbiolo da Barbaresco DOCG, Dolcetto DOC, and Barbera d'Alba DOC.
The pomace is fermented and then immediately distilled in an ancient still, the only direct-fire still.
This grappa is created by the hands of artisan artists.
The grappa is aged in classic Piedmontese acacia wood barrels for 12 years.
This aging has given the spirit its distinctive amber color and the designation "Riserva" or "stravecchia." Aged for 12 years in barrels and in the distillery's famous underground cellars, it acquires a dark amber color and a smooth, full-bodied flavor.
The aging process follows Serafino Levi's recipe: in acacia barriques for 12 years at a temperature between 14 and 19 degrees Celsius.
Limited edition of only 300 bottles worldwide.
Each bottle of Levi del 81 Fiammifero grappa is numbered and comes with a producer's certificate.
Lidia and Romano Levi's grappas are rare, highly collectible.
