This is the fourth release of this Clairin turned Rum Vieux and is aged under the tropical sun.
It is Clairin that becomes a real Rum, exceeding 5 years of age, thus losing the primary characteristics of Michel Sajous' Clairin, to be enriched with a new aromatic profile typical of aged rums.
Few bottles of this experimental Sajous were produced, all bottled at the full strength of 57 Avb, a record.
Originating from the Grand Terroir of St Michel de L'Attalaye in Haiti, this Pure Single Rum is born from 100% crystalline sugar cane and is aged entirely in the tropical climate of Port-Au-Prince in 18 mixed barrels that have contained rum and whisky.
Produced with Cristalline cane, one of the best ancient varieties, now grown only in Haiti, harvested by hand when perfectly ripe and transported on the backs of animals to the distillery.
It is pressed in the small mill, more gently than the typical way of the French Antilles.
Fermentation starts spontaneously with indigenous yeasts.
The distillation still is heated over the fire of "bagasse", the cane fiber squeezed and dried in the sun.
Everything is done with respect for nature, the land, culture and Haitian rhythms.
Totally aged in the tropical climate of Port-Au-Prince from a selection of 18 mixed barrels that have contained rum and whisky, Vieux Sajous 2018 is the first Clairin which, exceeding 5 years of age, becomes a real rum.
Vieux Sajous 5 years marks a turning point in aging, the result of the experience of the brief refinement of Clairin Ansyen but above all due to the fact that Clairin Sajous had a much lower full alcohol content than any other rum at the time of barreling.
This Vieux Sajous is the demonstration of the great aging capacity that the Clairins of this distillery are demonstrating.
The change in packaging, which is reminiscent of the famous Caroni rums, intends to give a visible sign of the extremely interesting quality and high level achieved.
The result is extraordinary.
