Vittorio ‘Gianni’ Capovilla is recognized worldwide as one of the best, if not the best, distiller in the world, especially for his passion: fruit distillates, rums and grappas.
Capovilla defines his delicious grappas as the noble expression of a "poor" product.
Mirabelle plum distillate is a fruit distillate, of the highest quality, intense and scented, obtained by double-pass distillation in small copper stills in a bain-marie of ripe Mirabelle plums harvested and left to ferment.
Vittorio has made the excellence of the raw material and the purity of the distillates his true reason for living.
Its philosophy and continuous research into quality are concentrated in the saying '"The raw material comes first, then comes the rest."
Capovilla's Mirabelle plum distillate is soft, intense and powerful, obtained from top quality Mirabelle de Nancy plums.
The Mirabelle de Nancy plum is an ancient variety of French origin.
In France it is considered the best plum for both jams and other uses in the kitchen.
It belongs to the ancient fruit from Lorraine, a region in the north-east of France where it has been grown since before 1400.
Vittorio Capovilla selects only the best plums, freshly ripened, fragrant and full of sugars.
This Capovilla Mirabelle plum distillate is colorless, clear and crystalline.
The Capovilla plum distillate obtained is full of aromas, perfumes and in the mouth it is silky, an explosion of sweetness.
The product rests for at least 5 years in stainless steel tanks.
It is then bottled, diluted with spring water from Monte Grappa and brought to an alcohol content of 41% vol. without adding sugar, flavourings or anything else.
The design of the distillate bottle is beautiful... polished and sealed by hand, it brings to mind an atmosphere that feels like home.
Supplied with a hand-filled label, the bottle tells its story, proud of its history: in fact, the type of fruit that forms its soul, the year of the harvest that gives it its characteristics and the number of the bottle that underlines its uniqueness are specified.
Tasting Notes:
Aromas: On the nose it expresses intense, summery aromas of yellow fruit, pleasant, refined and elegant aromas of flowers and citrus.
Taste: In the mouth it is powerful. The flavours are those of delicious plum flavour with excellent correspondence with the nose, pleasant softness, very balanced, with a jammy finish.
