The Ribolla Gravner grappa by Distilleria Capovilla is an unaged grappa produced in Italy, the Ribolla pomace comes from the Tenuta Gravner estate.
The Ribolla Gravner Grappa is another exclusive distillate signed Capovilla.
The Ribolla Gravner Grappa is a white distillate produced from the pomace of Ribolla Gialla, a grape variety of Greek origin planted on the Gravner estate, the fruit of a white grape vine grown in Friuli following the single-varietal method.
The Ribolta that has remained in amphorae together with the marc for a period of 6 months, is drawn off with the Easter moon, after which the marc is delivered to Rosà, a town near Bassano del Grappa, and is then distilled immediately.
The Grappa di Ribolla Gravner from the Capovilla distillery is a structured distillate with significant persistence, the result of the great friendly bond between the master of grappa Vittorio Capovilla and the Friulian winemaker and oenologist Josko Gravner.
The journey of the Capovilla distillery began in 1974, it is long and tiring, but in the end it has an exceptional response.
His master Gianni Vittorio Capovilla created it starting from his interest in oenological machines and his passion for travel and the desire to discover: in countries such as Switzerland, Germany and Austria, Capovilla learned that distillates must be made differently from the Italian methods, at the time still linked to home uses.
From new knowledge and comparison with other skills in the sector, innovative ideas are born, which however always revolve around the concept of quality of the raw material.
“It all comes from a simple equation: with the experiments I was doing, I understood that the better the fruit, the better the final product. If I start from an exceptional raw material, the only risk is to ruin it… all in all, I don’t invent anything. The first real and great job is to produce myself or go in search of the best raw materials. The raw material comes first, then comes the rest.” - Vittorio Capovilla
Grappa Ribolla Gravner by Capovilla has an alcohol content of 52%.
It is a unique distillate of its kind, with an important persistence, which is born from the collaboration with another strong personality in the sector, the oenologist and wine producer Josko Gravner.
