Vittorio ‘Gianni’ Capovilla is recognized worldwide as one of the best, if not the best, distiller in the world, in particular for his passion: fruit distillates, for rums and for grappas.

Wild raspberry distillate is a distillate of wild fruits, forest raspberries, obtained by double-pass distillation in small copper bain-marie stills.

The raspberry is the wild fruit that keeps all the promises made to the senses: it involves the eyes with its color, the nose with its intense aroma and the taste with its sensual velvety aroma in the mouth.
For the wild raspberry distillate of Capovilla, wild raspberries from the forests of Eastern Europe are used.
Here the woods are cut down every 40-50 years and, until the plants grow back, wonderful expanses of spontaneous fruits develop, which we are happy to take advantage of thanks to the collaboration with a cooperative that sends them to us in favorable years.
Even in this case the distillation yield is very low: about 50 kilos of raspberries are needed to produce one litre but the distillate we obtain is extraordinary.
Capovilla's raspberry distillate is soft, intense and powerful, a true concentrate.
These are excellent raspberries, of high quality, large, with a sweet flavour, an intense aroma and firm and crunchy pulp.

Wild raspberries must be cleaned, destemmed and fermented as is done with red wines, at the end of fermentation all the must obtained is distilled in small bain-marie stills.
This raspberry distillate is colourless, clear and crystalline.
The product rests for at least 2 years in stainless steel tanks.
It is then bottled, diluted with spring water from Monte Grappa and brought to a strength of 41% vol. without adding sugars, flavourings or anything else.
The design of the distillate bottle is beautiful... polished and sealed by hand, it brings to mind an atmosphere that feels like home.
Equipped with a hand-filled label, the bottle tells its story, proud of its history: in fact, the type of fruit that forms its soul, the year of the harvest that gives it its characteristics and the number of the bottle that underlines its uniqueness are specified.
