The prugnolo gentile distillate is one of the rarest and most particular distillates produced by Capovilla, only 88 liters are produced.
The prugnolo gentile is a very thorny shrub that grows spontaneously in depressions, ditches or on the edges of agricultural land and whose harvest is very demanding.
We can define it as the progenitor of all the plums and damsons we know.
It is not consumed as a fresh fruit because it is very tannic, astringent and allappent, and is called this way for its properties as a "gentle" laxative.
But it is a fruit that becomes truly exceptional when distilled.
The Prugnolo Gentile is among the rarities sought and collected by Vittorio Capovilla for the creation of his distillates.
The distillate of prugnolo berries is a fruit distillate, obtained by double-pass distillation in small copper stills in a bain-marie.
Vittorio has made the excellence of the raw material and the purity of the distillates his true reason for living.
The distillate of prugnolo gentile berries by Capovilla is soft, intense and powerful, obtained from top quality wild prugnolo.
These are ripe berries, with a sweet flavour, an intense aroma and firm and crunchy pulp harvested in Veneto in Vivenza.
Vittorio Capovilla selects only the best berries, freshly ripened, fragrant and full of sugars.
This distillate of prugnolo gentile is colourless, clear and crystalline.
The Capovilla distillate of prugnolo gentile berries obtained is full of aromas, perfumes and in the mouth it is an explosion of sweetness.
The product rests for at least 5 years in stainless steel tanks.
It is then bottled, diluted with spring water from Monte Grappa and brought to a strength of 41% vol. without adding sugars, aromas or anything else.
The design of the distillate bottle is beautiful... polished and sealed by hand, it brings to mind an atmosphere that smells of home.
Supplied with a hand-filled label, the bottle tells its story, proud of its history: in fact, the type of fruit that forms its soul, the year of the harvest that gives it its characteristics and the number of the bottle that underlines its uniqueness are specified.
Tasting Notes:
Aromas: The nose expresses intense, spring-like, fresh, pleasant, refined and elegant aromas, intense aromas of toasted almond, with a fruity mix of ripe plums.
Taste: In the mouth it is powerful, strong note of marzipan. The flavors are those delicious flavor of plums with excellent correspondence with the nose duplicated, pleasant softness, very balanced.
Perfect after coffee or with a good chocolate.
