The Quince Distillate is produced by Capovilla, it is not a traditional sweet and soft fruit distillate, the ancestral variety quince distillate is fresh, citrusy and will amaze you served fresh or in cocktails.
To obtain a liter of pure quince distillate, 60 kilos of fruit are needed that are difficult to find, at least in the ancient and original version.
The particularity of the distillate is due precisely to the varieties of quinces that are extremely fragrant but with a slightly sour taste, which makes it unforgettable to taste by intensely releasing the aroma of this fruit.
The distillate is produced with quinces of our own production from the Trentino-Alto Adige region.
In fact, today in Italy clones of this variety are grown that produce large fruits, only attractive to the eye but without the authentic aroma that we seek.
The Capovilla method is the long-term bain-marie distillation that allows the fruit to be processed while preserving its natural aromas as best as possible.
The result is wonderful: a very fascinating distillate on the nose, fresh and citrusy, to be consumed also as an aperitif or sprinkled on a salad of raw asparagus.
