Exceptional bottling of the Chichibu distillery of Ichiro Akuto, the single malt Chichibu Chibidaru distilled in 2009 and bottled in 2013 limited edition of only 3900 bottles.
The Japanese whisky Chichibu Chibidaru 2009 is the first single malt produced by the Chichibu distillery aged in Quarter Cask casks.
A "chibidaru" is essentially the Japanese equivalent of a quarter of a cask.
In this case, the staves of a hogshead barrel have been shortened to create a small barrel that holds about 150 liters. A limited edition of 3,900 bottles.
Let us remember that the distillery founded in 2008 by Ichiro Akuto, with barley fermentation on the distillery floor and dedicated to the fundamental concepts of Earth, Water, Fire and Air, which respectively represent raw material, fermentation, distillation and aging, and that it is equipped with master coopers, a real tonellerie that produces barrels.
His family, with the Hanyu distillery, had a history of producing sake for 300 years before his grandfather changed production in favor of whiskeys.
That of the distillery, Hanyu, unfortunately lasted only two generations, but Ichiro is determined to keep the family tradition alive.
Distilling is the passion of Ichiro Akuto, who amazes us with exceptional single malts, true liquid gold.
Barley malt fermented to Akuto's specifications learned during a trip to Scotland.
Ichiro's single malt immediately won over enthusiasts and collectors of Japanese whisky.
This Chichibu is a Japanese Single Cask distilled in 2009 and bottled in 2013, produced from English Concerto barley and water from the Ochi River.
This whisky is produced thanks to the talent and experience of Ichiro Akuto through indirect steam heating; the washback is in Mizunara wood; the mashing is manual, and the fermentation is long; the distillation takes place in a Forsyth pot still with a descending neck; the cask used for the refinement is precisely a Quarter Cask barrel that accelerates the oxygenation and aging process of the single malt.
Once again the combination of the refinement barrels proposed by Ichiro is innovative but, as a great master, he produces one of the best Japanese single malts in the world.
Although aged 4 years, this single malt has characteristics of evolution and unexpected flavors, very complex and exceptional.
