Here we are in front of the Grappa Levi Romano della piccola botte ambrata aged 15 years.
Produced in 2008, it was aged in small Piedmontese barrels for 15 years.
It is often a mistake, when talking about grappas, to think only of Romano.
They should be called GRAPPA DI LIDIA E ROMANO LEVI, both because the distillery was the undivided inheritance of the brothers, and because Lidia, on the first floor of the house where she had isolated herself leading an almost monastic life, selected and created the very rare bottles of herbal grappa.
Lidia was the older sister, an exceptional woman, protective, severe and cautious; Romano speaks of her in an interview:
"....for me it was very beneficial (her presence) because I certainly wouldn't be here at this point ... yes, she is severe with me too and therefore she was very useful to me in my work. She also works to make the herbs that are works of art in the bottles. For me she was very useful."
But it is Romano who is responsible for the great fame gained by his bottles of grappa for the hand-written labels and then enriched with poetic phrases or naive drawings, those little masterpieces that today we define as "WILD ART".
The distillery was built by Serafino Levi and was equipped, then as now, with a direct flame still, as we learn from one of the rare interviews given by his son Romano in 1991, where a few expert craftsmen work, defined by Romano himself as “ignorant”… because they are unaware of the danger they run as live flame distillers can explode.
To use a live flame distiller requires great expertise and skill, but this procedure perfected by Romano Levi and still strictly respected today, guarantees the perfect maintenance of all the aromatic components, crucial for the organoleptic characteristics of the Grappa.
Here we offer Levi Romano amber grappa aged 15 years in small Piedmontese acacia wood barrels.
The pomace of the great Piedmont DOC – DOCG wines comes from the Langhe, places where the vine has found one of its maximum expressions; the Grappa that comes from it finds an extraordinary and exciting balance derived from the aging in underground pits.

This tanning process then passes into the copper discontinuous still, the only one in the world still active with direct flame for the distillation of grappa.
This is how the grappa from the small barrel aged 15 years by the Serafino Levi distillery is born.
An extraordinary grappa that is left to age for 15 years before being bottled at full strength.
Aged for 15 years in single classic Piedmontese acacia wood barrels and stored in a room with the right humidity and at a constant temperature between 14 and 19 degrees C°.
The aging of 15 years softens the Serafino Levi grappa and enhances its intense aromas.
