Every year Wilson & Morgan selects new casks and releases an exciting new release that draws on their long experience maturing single malts, with ageing in special casks.
Wilson & Morgan CAOL ILA 8 Year Old Quercus Alba is a bottling of five casks finished in ex-bourbon cask refill hogshead and two American virgin oak casks.
The result is the perfect balance between the salty, dry, mineral flavours of the classic Caol Ila whisky, with the virgin oak cask adding a backbone of creamy, buttery, robust sweetness.
It’s rich, fuller-bodied and bolder than usual. With the vanilla notes and soft tannins you’d expect from this type of cask.
The key is in the balance, as the lighter bourbon casks still provide a classic lively counterpart with their intensely smoky, sharp sea notes.
This is still an Islay whisky… but with a new, sweeter edge.
Tasting Notes:
Colour: Wilson & Morgan CAOL ILA 8 Year Old Quercus Alba is a brilliant gold.
Aromas: On the nose it is quite fresh, lemony, with notes of ash: young and lively, powerful and adventurous.
Taste: On the palate, it has a medium body with salty notes, with lemon peel and green apple, then veering towards notes of licorice and a huge explosion of chimney smoke, ash and bonfire.
