A rare bottling of Rosebank single malt whisky bottled by Signatory for the 2000 millennium edition.
The single malt was distilled in February 1990 and aged for nine years in oak casks.
This Rosebank whisky was bottled on December 7, 1999 for the final edition celebrating the new millennium in 2000, in just 470 bottles.
The Rosebank distillery is one of the legendary closed distilleries; it ceased production in 1993 and was located in Camelon, a town near Falkirk, on the banks of the Forth and Clyde Canal.
The name Rosebank Distillery originates from the roses blooming on the banks of the canal, near the distillery.
Signatory wanted to pay homage to the purity of Rosebank single malts by bottling a spirit aged only in new oak casks, Cask 529.
Rosebank Distillery was known for producing a light, floral malt, considered by renowned industry experts to be excellent, if not among the most harmonious single malts in the world.
Michael Jackson, in his Malt Whisky Companion, calls it the "finest example of a Lowland malt," and the authoritative Jim Murray considers it the top-of-the-range Lowlander whisky.
It should also be noted that, in typical Lowland tradition, the whisky was triple distilled.
This was a significant loss for all lovers of its floral and fruity character.
Plans were made to reopen the Rosebank Distillery, but following the theft of the original stills, the idea appears to have been permanently shelved.
Fortunately, independent bottlers like Signatory, drawing from their stocks of Rosebank whisky, can offer us a taste of this distillery's whisky.

Tasting Notes:
Color: Straw yellow.
Aromas: Hints of lavender, rose petals, and beeswax accompanied by a hint of vanilla.
Taste: The palate is black pepper with hints of red apple, orange peel, and almonds, complemented by a creamy nuance of milk chocolate.
Rosebank Signatory 1990 whisky pairs well with aromatic and fragrant cigars like new ones, or with wonderful pipe tobacco with its notes of rum and chocolate.
