Sibona MaeCo Aged Gin is born from the union of two worlds: MA and CO', meaning Sea and Hill, and a long aging in former port wine barrels.
It is Sibona's Premium Dry Aged Gin, enriched with botanicals from Piedmont and Liguria, which, after resting in steel barrels, is refined in port wine barrels.
A gin that celebrates the meeting of the hills and the sea, refined by time, a great master.
It is made using carefully selected botanicals from these two Italian regions. Juniper berries, Sale San Giovanni lavender, sage, rosemary, Damask rose, and Nebbiolo grape leaves from Piedmont combine with lemon, thyme, Pernambucco orange, and Genoese DOP basil from Liguria, creating a unique and sophisticated aromatic profile.
Sibona is one of Piedmont's historic distilleries, holding Distillation License No. 1 issued by the U.T.F., the financial body that oversees all distillery operations.
Since its inception, Distilleria Sibona has always considered itself an artisanal company, producing single-varietal grappas through steam distillation of fresh pomace immediately brought to the distillery.
Distillation began using an old steam locomotive, which later gave way to copper stills.
The pomace is distilled fresh, upon arrival at the distillery, a process that allows for even greater extraction of the aromas and flavors of the harvest.
MAeCO’ Gin is produced from a slow maceration of Piedmontese juniper berries and other botanicals from Piedmont and Liguria, which are then distilled separately.
The individual distillates are then blended according to a unique and secret recipe.
But what makes this Aged Gin Sibona truly unique is its special finish in barrels previously used to age Port.
This essential choice ensures the finished distillate possesses unique complexity and character.
A pale amber color, the nose reveals an elaborate bouquet, where floral and citrus notes blend harmoniously with those of vanilla and cocoa.
The resulting gin is diluted with Eva natural water, which flows from Europe's highest spring at 2,042 meters, to achieve 42% ABV.
Finally, it is refrigerated and delicately filtered before being bottled.
