The brandy is made from pomace of the Brachetto grape variety, sourced from the most prestigious area, the central one of the entire DOC, located in the heart of the Acquese area.
Immediately after the vinification process of the famous Brachetto wine is completed, the pomace is destemmed and sent to the distillery for accelerated fermentation, then distilled to obtain a grappa rich in the characteristic aromas of Brachetto.
The distillation is entirely in-house, in copper stills, thanks to the expert experience of Sibona's winemakers and master distillers.
The maturation takes place over a long period in stainless steel tanks.
