The pomace arrives at the distillery very fresh, still full of all the properties that the distillation process—conducted using stills powered by small steam boilers—will preserve intact and distinct.
Once the production process is complete, the grappa is transferred to small oak and acacia barrels, where it ages for a long period of 15 years before being bottled.

The 15-year-old Marolo Barolo grappa pairs well with a Toscano del Presidente or, challenging the competition, with an Orciolo di Mastro Tornabuoni, whose organic tobacco comes from Col d'Orcia, Montalcino.
