Freisa is one of the oldest and most characteristic red grape varieties in Piedmont, with historical roots extending at least to the Middle Ages.

Already mentioned in sixteenth-century documents from the hilly area between Chieri, Pino Torinese, and Monferrato, "Fresearum uva" was considered a prized variety, capable of producing lively and fragrant wines, typical of the subalpine agricultural tradition.

The etymological origin may derive from the Piedmontese term "fresa" or "fresia," meaning strawberry, referring to the aromatic traits and fruity character of the wines.

Since the nineteenth century, the variety has been associated with Nebbiolo, with which it shares part of its genetic genealogy: modern studies have confirmed a very close kinship, plausibly a father-daughter bond or genetic brotherhood.

Between the eighteenth and nineteenth centuries, Freisa was one of the most widely cultivated grapes in the Turin hills, the protagonist of sparkling or slightly sweet wines that also became famous in Turin and the Savoy courts.

The distillery pays particular attention to the selection of the pomace, which arrives very fresh in the cellar, where stills operate with small steam boilers, following the discontinuous method.

Once the grappa is obtained, it is left to age for several months in stainless steel containers, until bottling begins, followed by its release.
