Marolo Grappa di Dolcetto is made from the pomace of the Dolcetto grape of the same name, sourced from an area where Dolcetto always produces excellent wines: the Alba area.
The distillery takes particular care in selecting the pomace, which arrives very fresh in the cellar, where stills operate with small steam boilers, following the discontinuous method.
Once the Grappa is obtained, it is left to age for a few months in stainless steel containers, until bottling begins, followed by its release for sale.
