Clairin Vieux Casimir 2016 Caroni cask 10 yo Vol.55,9% Cl.70

This is the first release of Casimir distillery's Clairin to evolve into *Rhum Vieux* (aged rum), matured in old ex-Caroni rum casks.

It is the first Clairin to become a true rum, surpassing 10 years of aging without losing the primary aromatic characteristics of Casimir's Clairin, while acquiring the new flavor profile typical of aged Caroni rums.

Clairin Vieux Casimir 10 Y.O. originates in Barradères, southwestern Haiti, born of Faubert Casimir's craftsmanship and the distillation of the native Hawaii sugarcane variety; it is aged entirely in the tropical climate of Port-au-Prince in a selection of ex-Caroni casks.

It is produced using Hawaii cane—one of the finest varieties, now grown only in Haiti—harvested by hand at peak ripeness and transported to the distillery on the backs of animals.

The cane is pressed in a small mill using a gentler process than is typical in the French Antilles.

Fermentation begins spontaneously using indigenous yeasts.

The still is heated by a fire fueled by *bagasse*—sugarcane fiber that has been pressed and sun-dried.

Aged entirely in the tropical climate of Port-au-Prince in a selection of five ex-Caroni casks, Clairin Vieux Casimir 2016 is the first Clairin to surpass 10 years of aging and become a true rum.

Clairin Vieux Casimir 2016 (10-year-old Caroni cask) marks a turning point in the aging process; it draws on the experience gained from the brief maturation of Clairin Sajous, but is distinguished above all by the fact that the spirit had a much higher full-proof alcohol content at the time of barreling than any other rum.

The result is extraordinary.

Tasting notes:

Color: Deep, rich dark amber.

Nose: A wide array of aromas unfolds into a bouquet featuring notes of caffè latte, honey, and hazelnut, followed by nuances of candied citrus peel and raisins.

Palate: Full-bodied and smooth, offering fruity hints of apple and peaches in syrup, alongside oriental spices that add vibrancy to the sip. A refined finish with great persistence.
