Sherry is a laborious and sophisticated wine; fallen into oblivion for years, has never really lost its value of wine of excellence so much that lately the spotlights are rekindling on this truly unique product.
It is a liqueur wine produced from palomino grapes (90% of production), Pedro Ximénez (abbreviated PX) and moscatel. It differs from the other wines for the working process. A time after the harvest the grapes were subjected to a drying on mats, while today we prefer to make a late harvest. Palomino is by far the most widely used grape. Thanks to the warm winds of the south and the protective layer of pruina present on its skin, it allows the formation of colonies of indigenous yeasts, called levaduras de flor, responsible for the formation of the protective cap during fermentation.
