Kilchoman distillery is Islay's newest distillery, still independently owned, producing excellent single malt.

It was born as an agricultural micro-distillery, with a production that is one tenth of the average of the other Islay distilleries.

Located on the western side of the island near the Rockside farm and not far from Lake Gorm, Anthony Wills wanted to create his own artisan enterprise on the model of traditional agricultural distilleries, in fact Kilchoman is one of the few distilleries in Scotland that aims to perform all stages of the whiskey production process at home.

It is inserted inside the Rockside Farm from which it takes the barley that mortar directly into the house to cover a large part of its needs.

Barley is grown at Rockside Farm and malted using the proprietary malt floor (Kilchoman is one of the last seven distilleries left to still use an internal malt floor), obviously also distillation, maturation and bottling take place inside of the distillery.

Currently the distillery uses the internal malting floor for 20% of the needs, the internally produced malt has a peat level of 20ppm, the remaining is instead purchased from the Port Ellen malt at 50ppm.

The distillery is equipped with a mash tun (semi-lauter), 6 steel washbacks with an average fermentation time of about 90 hours and two stills.
