In this way the alcohol absorbs the different flavors and takes their color. The juniper elixir is gently filtered after a long cold infusion in order not to lose its aromatic charge.

The Professor's distillates come from an idea of ​​Carlo Quaglia - a historic Piedmontese distiller - and the guys from the "Jerry Thomas Speakeasy" in Rome. The intention is to rediscover the production style typical of the Prohibition era, known as the "bathtub", in which a container, even a bathtub, was enough to infuse alcohol and spices. Jerry Thomas Speakeasy is the first Italian club in Rome for barmen and enthusiasts, open since 2009. A project born from the idea of ​​Leonardo Leuci, Antonio Parlapiano and Roberto Artusio, mixologist who after years of presence on the Italian and international market, have decided to create this space recognized among the 25 Best Bars in Europe and one of the 50 top bars in the world. Not just a private club for enthusiasts, but a real laboratory where you can rediscover preparation techniques and stories from the world of bartending. Jerry Thomas was an American bartender who since 1851, thanks to his pioneering work in the popularization of cocktails, is considered "the father of the art of mixing cocktails". In addition to writing the first cocktail recipe book, he has often been nicknamed the "Professor" Jerry Thomas; hence the name "Gin del Professore". The Antica Distilleria Quaglia was born in Castelnuovo Don Bosco on the hills between Monferrato and the Turin hills, which have always been considered lands of great wine tradition, at the end of the 19th century. In 1906 it was purchased by cav. Giuseppe Quaglia, who expands it, digs the well for water supply and installs a boiler for the production of steam. Today the direction is the young Carlo Quaglia, former creator of the Professor's Vermouth.
