The Sonoma County Distilling Company was born in 2010 and is located in the Californian county of the same name, close to Lake Sonoma,

It takes its name from Lake Sonoma which guarantees the distillery the supply of one of the purest waters in the region, for the purpose of producing Whiskey.

Founded by Adam Spiegel, firm supporter of the philosophy that can be summed up with the words "From Grain to Glass", Sonoma County Distilling welcomes all stages of distillate production under one roof.

The cereals are selected from local producers, fermentation takes place naturally and at an uncontrolled temperature, distillation is artisanal and over direct heat, aging is done in small barrels and, finally, bottling is manual.
