Jewel distillery of the Isle of Arran, relaunches the peaty style of the single malts of the islands, because it was born only to produce highly peated whiskeys.
Could it be the Ardbeg and Bruichladdich distillery?
While Arran's classic whiskey style isn't peaty, the Lochranza distillery distills a small amount of peaty malt each year for its Machrie Moor expression.
By opening the Lagg distillery on the south side of the island, Isle of Arran Distillers will move all peat whiskey production to its new location, a distillery that will be dedicated to peat exploration.
Lagg single malt itself will be a heavily peaty style, produced using barley with a phenol content of 50ppm.
While all the barley will be malted on land, the peat used to dry the barley will come from all over Scotland, possibly even the world, as Lagg explores the impact of peat terroir on whiskey flavor.
The experimentation doesn't stop there: Lagg will work with various yeast strains and barley varieties while "playing" with different aspects of the production process. Despite its focus on innovation, Lagg will be a sizable operation, capable of producing 500,000 liters of spirit annually.
With 140 apple trees already planted on the surrounding estate, Lagg will also be making his own cider and apple brandy, rather than following the rest of the Scottish "artisanal" distillation movement and producing gin.
