Located in the southwestern part of the island, 300 meters above sea level, Chamarel's rum distillery enjoys a suitable microclimate in the heart of a fertile valley.

Open from September 2008, it offers guided tours, tasting of locally distilled farm rum, a shop and a restaurant, L'Alchimiste. Serve à la carte, elaborate dishes really deserve a "lookout": palm hearts salad, "baboon" (type of grouper), deer stag, "cochon marron" (boar), banana flambé to rum ....
It is worth paying the price of the meal, more than reasonable for the cuisine that tastes. The restaurant is open every day for lunch and on reservation in the evenings.
As far as manufacturing is concerned, distillery has opted for modern but environmentally friendly techniques, all for the preparation of one of the best rums that exist.

There are three distinct categories: White Rum (distillation in a discontinuous alambic), Coeur de Chauffe (two distillates in anambic) and Rum Paglia (oak barrel maturation). Rum here is agricultural, based on sugar cane, other than traditional rum, produced with molasses.
