It all began in 1892, at the oldest and most renowned bodega in Ensenada, Mexico, where Juan Hussong served his artisanal tequila and the classic margarita is said to have first appeared. Over 120 years later, Hussong Tequila continues the rich history and legacy of the Hussong family name.

It all starts with the agave plant. After growing for at least five years, the agave is harvested by a Jimador with a sharp-bladed Coa.

The plants are pruned very close to the heart, leaving a white appearance with minimal green exposure. This process is critical for a clean and efficient fermentation and distillation process, resulting in a quality finished product.

The trimmed agave hearts are cooked using two different methods and then combined for optimal results. 50% of the batch is slowly steam-roasted in century-old stone-walled brick ovens for approximately 45 hours.

This traditional cooking method prevents the hearts from caramelizing, softening the fibers and producing fermentable sugars.

The second half of the batch is cooked in stainless steel autoclaves for approximately 35 hours. This innovative cooking method is a different approach to obtaining the same sugars, while also making the process more efficient.

The combination of traditional and innovative methods provides the perfect product to grind for fermentation.

The fermentation process begins with the addition of natural yeast to the agave juice. After approximately 50 hours, the fermented juice is between 5-9% alcohol and is now referred to as “beer.” We believe our extended fermentation process results in better overall flavor than the more common method of fermenting for only 10-12 hours.

The slower the fermentation process, the more agave flavor the tequila will have.

Each batch of “beer” is distilled twice. The first step separates and concentrates the alcohol from the beer in a slow process that takes about five hours. At this point, the alcohol content is about 25%, creating what is called “regular” tequila.

The second distillation process enriches the alcohol content to about 55%, resulting in the final product before aging.

Hussong’s Reposado, Anejo, and Platinum tequilas are all aged in used whiskey barrels for several months before bottling.

The aging process imparts a unique flavor profile to each member of the Hussong tequila family.

The tequila is aged in barrels for four to fifteen months, depending on the product. The longer the tequila is aged, the more time it has to acquire flavor, color, and aroma from the oak barrel.
