History and Origins

The Zafra brand was founded in 2009 by Lazaro Carbajal and Gardner Blandon, two experts with over twenty years of experience in marketing and international spirits trade. Their goal was to create a premium rum that emphasizes the pure quality of the liquid.

To bring this vision to life, the founders relied on an absolute legend in the industry: Francisco "Don Pancho" Fernández. Originally from Cuba (where he graduated in biochemistry and microbiology before becoming director of the island's spirits industry), Don Pancho moved to Panama in the early 1990s.

He is considered one of the world's greatest Maestros Roneros, and the Zafra line was born under his expert supervision at the Las Cabras distillery in Panama.

Production Method

Zafra's philosophy is based on artisanal precision and a respect for time. The process follows strictly controlled steps:

Raw Material: Only local sugarcane is used, harvested by hand and transformed into the highest-quality molasses (Top Grade A).

Fermentation and Distillation: The molasses is fermented using native yeasts grown locally. Subsequently, distillation takes place using continuous column stills, a method that yields a clean yet aromatically rich distillate.

Small Batch Aging: The rum is aged in ex-Bourbon American white oak barrels. Panama's tropical climate accelerates the interaction between wood and spirit, lending a complexity that would require much more time in European climates.

1. Zafra Master Reserve 21 Years

This is the brand's entry-level expression and its global calling card. It matures for a full 21 years in ex-bourbon barrels.
