Vittorio ‘Gianni’ Capovilla is recognized worldwide as one of the best, if not the best, distiller in the world, especially for his passion: fruit distillates, rums and grappas.
Capovilla defines his excellent grappas as the noble expression of a "poor" product.
The Isabella grape distillate is a fruit distillate of the white Fragolino grape obtained by double-pass distillation in small copper bain-marie stills.
Vittorio has made the excellence of the raw material and the purity of the distillates his true reason for living.
Only grapes of these particular varieties of Hybrid Grapes (American) are selected.
The fresh grapes must be destemmed and fermented as is done with red wines, at the end of fermentation all the fermented must is distilled.
The Isabella grape distillate obtained is full of aromas, perfumes and in the mouth it is an explosion of sweetness.
The product rests for at least 2 years in stainless steel tanks.
It is then bottled, diluted with spring water and brought to a strength of 41% vol. without adding sugars, aromas or anything else.
