Agricole Rum
Agricultural rums are those rums produced from pure cane juice from a single distillery and continuously distilled with créole column and column stills.
There are 12 varieties of sugar cane juice that can be used for production while fermentation must begin within 24 hours of harvesting.
They represent the most authentic and elegant rums where unique aromas are combined thanks to the aging in wood at high temperatures like those of the Caribbean.
Tropical or Caribbean aging is accelerated by the heat which reduces the amount of rum while increasing the quality and complexity.
This is why they are opposed to industrial rums aimed at reducing quality in favor of quantity.
Here we collect all the rums obtained from the distillation of sugar cane juice, which can boast the title of "Rhum Agricole".
However, it should be noted that there are agricultural rums AOC - DOC.
AOC - Denomination of Controlled Origin: the so-called geographical denomination certified and regulated by the French government for cheeses, wines, spirits and other agricultural products.
The island of Martinique hosts the only AOC outside the mother country, and is the only one for rum in the world.
In other words, rums from Martinique are protected and strictly regulated by the same body that governs production.
