Boulard's Calvados Pays d'Auge XO is a fine apple cider distillate that synthesizes the aromas present in each Calvados made by this family-run Maison founded in 1825 in Coquainvilliers, in Lower Normandy.
The Boulard Calvados Pays d'Auge XO derives from an assembly of numerous crus of Calvados Pays d'Auge produced through the double distillation technique.
Once the different batches of brandy have been assembled, the aging process takes place in French oak barrels for a long period, between 6 and 15 years.
The acronym 'XO' in fact means "Extra Old". During the maturation phase, a part of the liquid evaporates and this percentage is called "part des anges", or "part of the angels".
The Boulards represent the forerunners of the double distillation technique in the region and on their initiative the AOC Calvados Pays d'Auge was created in 1942.
The double distillation process consists of two consequent heatings, the first aimed at boiling the cider bringing the liquid to an alcoholic strength of 28-30%, while the second aims at concentrating the mass even more by evaporation, obtaining a product with an alcohol content not exceeding 72 degrees.
During processing, both the initial and final parts of the distillate are discarded to obtain a distillate of extraordinary purity.
Tasting Notes:
View: Dark amber with coppery reflections.
Aromas: evident notes of dried almonds, sweet spices, apple tarte tatin, toasted wood.
Taste: Round, soft, persistent and long.
