Sherry Pedro Ximénez “Don Guido Solera Especial” 20 Years Old - Williams & Humbert, in community terminology, Quality Liqueur Wine Produced in a Determined Region (VLCPRD, CE R1493/99).

Obtained from the Pedro Ximenez vine grown near Jerez de la Frontera, the grapes are left in the sun to dry.

The pedro ximénez grapes are left to dry in the sun for 15 days.

Grapes dried in the sun for 15 days at the Almijar (place to dry the grapes), must at high pressure in special presses, immediate fortification at 9º C, decantation and racking after the first cold weather, new fortification until reaching 18º C passing subsequently to the system of Criaderas and Soleras for its aging of the physical type.

After fermentation, it is fortified twice, before being left to mature for twenty years, according to the Soleras method.

This Sherry Pedro Ximénez “Don Guido Solera Especial” 20 Years Old - Williams & Humbert is a meditation wine, ideal to sip with dessert, it is in all respects a real pleasure for the palate.

Tasting notes:

Color: Dense and viscous, it has a shiny mahogany black color.

Perfumes: The varietal scents of the pedro ximénez grape, which recall figs and raisins, are enriched by broad balsamic aromas.

Taste: On the palate it is just fresh, with an overpowering, full, exquisite and honeyed sweetness.

It is an excellent meditation wine, but also good to drink with dessert, or to pair with a cigar.
