Produced around the French town of the same name, in the historic region of Charente, Cognac is considered to be the most refined of wine spirits.

Its production is limited to six official areas, called cru, where Ugni Blanc is grown, a grape from which fresh and low alcoholic whites are obtained, ideal for distillation.

The production process involves a double distillation in traditional Charentais swan neck stills, dating back to the 16th century.

The product must then age in Limousin or Allier oak barrels, taking on different qualifications depending on the aging period, ranging from a minimum of 30 months up to tens of years.

The definition of the best Cognacs goes through, in addition to the definition of the crus, also the indication of the aging periods.

By law, only oak barrels from Limousin or Tronçais can be used, for a period of not less than 2 years.

It is common practice to mix spirits subjected to different types of aging, in order to obtain products characterized by an impeccable balance.

In this case, the declared aging must correspond to that of the younger brandy used in mixing.

The VS abbreviation indicates a period of aging in wood of not less than 2 years, that is the minimum.

The VSOP acronym, corresponding to the term Réserve, indicates a minimum of 4 years. XO instead means Extra Old and foresees an aging of at least 6 years.

The unofficial wording of Napoleon, inaugurated for the Courvoisier Cognac, indicates an intermediate period between VSOP and XO; while Hors d’Age is usually written on labels to indicate longer aging.

Obviously the longer the aging period is usually directly proportional to the price.

The long period of aging in wood contributes to the exceptional refinement of the final product, excellent to be enjoyed neat to better appreciate its typical warm and velvety touch.
