Not far from that house there is a historic vinegar factory in the Reggio Apennines: the Antica Acetaia Dodi.

Its history has distant roots.

The Acetaia is the place where the miracle of maturation takes place, in which the "aerobic" process of acetification transforms the cooked must into Balsamic Vinegar.

The barrels and casks of precious woods, expertly selected, represent the heart of the company, where the Balsamic Vinegar is born, matures, ages and is refined.

The precious selection and care of the woods and the particular climatic conditions of the hills of Reggio Emilia and Modena are the ingredients in which, thanks to the hot and dry summers and the harsh winters, the optimal conditions essential for the refinement phases of the product are created.

It is precisely here that the meeting between Francesco Menozzi, alchemist of spirits, and the owner of the vinegar factory takes place, who, by trying one of the amaricati studied by the boy, falls in love with it, and decides to put its marvelous venue at his disposal for produce these liqueurs.

Thus was born Amarica: a visionary and concrete project, inspired by the idea that the experience of pleasure, to be fully experienced, must know how to renew itself and move towards ever new horizons.

But what is amaricate? It is a new type of bitter liqueur where herbs, instead of being infused only in pure alcohol, are infused in fine distillates such as whisky, rum, mezcal, brandy.

Because the quality of the alcoholic base, as every bartender knows, determines the quality of the result.
