Grappa di Brunello Capovilla is obtained by double-pass distillation in small copper stills in a bain-marie of grape marc of the Sangiovese variety of Brunello di Montalcino, harvested in the autumn and winter.

The processing that Capovilla has chosen for the prized raw material is highly artisanal.
The result is indeed grappas and very pure distillates, for true connoisseurs.
Grappa di Brunello Capovilla has the aroma of ripe red fruits accompanied by a full-bodied and elegant flavor, rich in fruit and spice aromas.
In the mouth it is gentle and round with good complexity and persistence.
After distillation, the distillate is stored in steel barrels for 2 years, a process called by Vittorio Capovilla “rest-esterification”.
It is then bottled diluted with spring water and brought to a strength of 44% vol. without adding sugars, aromas or anything else.
